What Counts as Millwork in a Restaurant?
The millwork package typically includes:
- Bar dies — the front structure of the bar that guests sit against, including the face panels, foot rail blocking, and the substructure that carries the bar top.
- Back bars — the display and storage wall behind the bartender: shelving, casework, refrigeration surrounds, and lighting integration.

Millwork is fabricated off-site while the GC builds the site — the two tracks run in parallel and converge at installation. The coordination points that matter:
- Release millwork early. Shop drawings and fabrication take real time. Millwork released late becomes the critical path.
- Blocking and utilities. The GC needs the shop’s blocking locations, and the shop needs to know where power, water, and drains land inside casework — this exchange happens during shop drawings, not during install week.
- Field conditions before final dimensions. Walls, floors, and soffits need to be far enough along to verify dimensions before cut lists are finalized.
- Install sequencing. Millwork typically installs after paint and floors but before final MEP trim and health inspection — a narrow window that punishes late delivery.
